Red Rice Apple Salad

Ingredients
1 cup Wild red rice
2 x Golden Delicious Apple
1 x Red bell pepper
1 x Yellow bell pepper
1/2 cup Raisins
Salt & Pepper
Olive oil
Preparation
Bring a pan with salt water to a boil. Boil the rice (wild rice takes longer to boil than normal rice). Poor the rice in a strainer and chill with cold water.
Peel the bell peppers and chop into small squares.
Wash apples and cut into approximately same sized cubes as the bell peppers
Soak the raisins in some water for a few minutes.
Mix all ingredients in a bowl and season with salt, pepper and a bit of extra virgin olive oil
